1 1/2 c Cake flour
2 ts Baking powder
1/4 ts Salt
2 tb Sugar
3 Eggs, separated
1 1/2 c Milk
1 ts Vanilla
6 tb Unsalted butter, melted
6 Ounces semisweet chocolate, divided
1 1/2 Ounces unsweetened chocolate
Here is a recipe for bitter-sweet chocolate waffles that will make any
serious breakfast into a desert meal!
In a large mixing bowl sift stir together the cake flour, baking powder,
salt and sugar.
In a medium bowl combine the egg yolks, milk, vanilla and butter.
Melt 2 1/2 ounces semisweet chocolate and all the unsweetened chocolate
in a double boiler over warm water or in a microwave oven.
Make a well in the center of the dry ingredients, pour in the milk
mixture and stir just until blended.
In a medium sized dry bowl, whip the egg whites to soft peaks, then
fold gently into the batter.
Add the melted chocolate and swirl through the batter.
Cook according to the waffle iron manufacturer's directions.
Distribute the remaining semisweet chocolate over the waffles.
