  • 1/2 c Flaked crabment or sliced
  • Shrimp, if desired

  • 1/4 c Butter
  • 2 tb Hot water
  • 2 Egg yolks
  • 1 tb Tarragon vinegar
  • 1 ts Finely chopped shallot
  • Or onion
  • 3/4 ts Finely chopped parsley
  • 1/8 ts Salt
  • Paprika
  • --------- SAUCE CHABLIS ---------
  • 1/2 c Chablis Wine
  • 2 tb Fresh lemon juice
  • 1/2 Bay leaf
  • 1/4 ts Salt
  • 6 Peppercorns
  • Water
  • 1 tb Butter
  • 1 tb All-purpose flour
  • 2 Eggs, beaten
  • With 1 TB. water
