Poppy Seed Cookies Recipe

Ingredients:

3 c Flour, all purpose
3/4c Vegetable oil
3 ea Eggs (On Sale)
1/2c Sugar
optional
1 ts Orange peel; finely grated
1/3c Poppy seeds
1/4ts Salt
2 ts Baking powder
1 ts Vanilla

Directions:

"These thin crisp cookies are traditionally not very sweet (but you can add more sugar if you wish) and the perfect accompaniment is a cup of tea.
The orange peel in the recipe causes them to be a little less crisp, but adds a lot of flavour.
" Sift or mix flour with baking powder and salt.
Stir in poppy seeds.
Reserve.
Combine orange peel (if desired) with sugar and eggs.
Beat with electric mixer until light and fluffy.
Beat in oil and vanilla.
Stir into flour mixture.
Break off balls of batter (each about 1 teaspoon) and place on cookie sheet that has been buttered and floured or lined with parchment paper.
Press cookies very flat with bottom of glass dipped in flour.
Bake 8 to 10 minutes in preheated 350F oven or until lightly browned and very crisp.
Cool on racks.
